This recipe is not late for Memorial Day. Nope. It’s right on time for Flag Day, and a little early for Independence Day. I’ve got you covered for your summer patriotic celebrations. (And you can use it for Memorial Day next year, too.)
Red White and Blue Fruit Salad
Ingredients
- 1 personal size watermelon
- 1/2 pt. blueberries
- 1/4 cup coconut chips or flakes
Instructions
- Chop the watermelon into cubes and place in a large bowl. Sprinkle with the blueberries and gently stir. Add the coconut chips just before serving; sprinkle them on top and gently stir them in.
A QUICK and EASY side dish for any summer celebration!

And so HEALTHY: watermelon has more lycopene than tomatoes, did you know that? That gorgeous red color means something healthy’s going on! And let’s not forget the antioxidant power of blueberries, and the healthy fats and fiber from the coconut.

What a great, easy and healthy side dish! I love that it’s so simple to put together that my son can make it. He wants to be a chef when he grows up (also, a Jet Fighter Pilot, doctor and astronaut) so I’m trying to find more recipes that he can make himself… without destroying my kitchen. Delicious! I’ll advocate for watermelons with seeds, though, as it just doesn’t feel like summer without the seeds.
