I find that a quick and easy, cheap and healthy side dish for dinner is a fruit salad. Whatever fruit I have on hand - apples, peaches, pears, melons, berries, etc. - I just chop it up and throw it in a bowl and voila! a tasty side dish! But that gets very boring and every now and then I have to spice it up a little. Last night for dinner, I created one of my more successful fruit salad alterations, and it was so delicious, I decided to pass it on to you:
Better than Fruit Salad
1 peach
1 nectarine
1 apple
1 TBSP honey
1 teaspoon cinnamon
For best results, use fairly firm peaches. Peel the fruit (if desired, personally I can’t stand peach fuzz, so I always peel it!) and dice. Combine in serving bowl and drizzle with honey. Add cinnamon, and mix thoroughly but gently until honey and cinnamon are distributed throughout. Serve immediately (before fruit browns).
To me, it tasted like a fruit cobbler, only better because I don’t like cooked fruit! This recipe is very healthy, as well. Of course, fruit is an essential part of any healthy diet, and honey is an excellent source of nutrients and vitamins as well. Cinnamon also has antimicrobial properties, and is useful in diets for people with conditions such as diabetes or heart problems, or for people at risk for colon cancer.
To change this recipe up, you could:
1. Change the fruit
To me, this tastes harvesty/fallish so some fruits, such as watermelon, really wouldn’t mix well. But pears would probably be delicious, and bananas might be nice as well.
2. Add freshly grated nutmeg
Mmmm, I love fresh nutmeg! I would have added it last night, but I had just set the dishwasher going - and the grater was in it!
3. Try (real) maple syrup instead of honey.
This would be quite delicious as well, I’m sure.
4. Warm it.
If you like mushy cooked fruit ( I don’t!), you might like this recipe warmed in the oven or microwave. Top it with a few gingersnap crumbs, and you’ve almost got a fruit cobbler!
