Now I have nothing against chocolate, mind you. Quite the contrary. A hot and creamy cup of homemade cocoa fits the bill deliciously on a cold winter evening.It’s just that at this time of year, when the frost is on the punkin and the fodder’s in the shock (whatever that is), I go a little pumpkin crazy and start putting pumpkin into just about everything.
Including hot chocolate. Except without the chocolate. So it’s not chocolate.
I’ts Pumpkin Not Chocolate.
And it’s amazing.
Pumpkin Not Chocolate
- 1 cup milk (any kind)
- 2 TBSP pumpkin puree
- 5 drops liquid stevia (or 1-2 tsp. honey)
- dash of cinnamon
- dash of grated nutmeg
- dash of ginger
- splash of vanilla
If you have a Vitamix:
- Place all ingredients in container. Blend on High until it begins to steam, about 3-4 minutes.
If you don’t have a Vitamix:
- Place all ingredients in a small saucepan on the stove. Whisk together over medium heat until it is blended and steaming. Use a stick blender (or jar blender) and blend until smooth and creamy.
Number of servings (yield): 1
